This incredibly unique sake from Koshimeijo Sake Brewery incorporates not one but three different rice types, all milled to 45% [a very time-consuming process]. The result is a mellow aroma of bananas with a sweet palate of sweetness. Be ready for a clean brew with a creamy hint of umami. Enjoy as you contemplate all the effort that went into the making of this Kimoto-method brew: a combination of rice, water, and koji is added to small tubs, and then mashed into a paste by brewers using a special pole. This is done with two brewers standing opposite each other in a tub while they alternate stirring.

Intensely Smooth and Flavorful

I'm drinking this sake right now and had to stop just to write a review. It is without a doubt in my top 3 sakes at the moment. So lush and smooth in the mouth with a perfectly clean finish! Not too dry, not too sweet. Just perfect...
